Now that the game season has drawn to a close, guinea fowl really come into their own and as long as the rain relents we shall have glorious wild rabbits too - stewed and as a confit - to bolster our meaty offering. The sea remains plentiful, weather permitting, and Chris and Chino have been taking any opportunity they can to take the Lady Hamilton out, sometimes only being able to get out for an hours fishing before the heavy seas force them back to shore. We're getting the likes of 11 kilo cod, pollock and haddock too, all perfect for fish and chips, and the cod roe on toast is a real little treat. Shellfish is still in abundance, both the common British prawn, and our native squat lobsters are gracing the menu, simply steamed and served with a lick of homemade mayonnaise. Simplicity on a plate.
